Comfort food is reinvented with this exotic combination of creamy coconut sauce, fresh veggies and Kelp noodles. Don’t be intimidated by the ingredients list if Kelp noodles are new to you! They can be found in the soy/vegan or specialty foods section of many grocery stores (including Whole Foods) and are an excellent source of calcium and iron. This recipe makes a generous portion so you can treat your Valentine to a delicious dinner, and save any leftovers for a grab-and-go lunch!

Serves: 4

Ingredients
1 package Sea Tangles Kelp Noodles
1 ea Sliced carrot
1⁄2 ea Sliced Cucumber
1 tablespoons pumpkin seeds
1 tablespoon Sunflower Seeds
1 tablespoon Slivered Almonds
1⁄2 cup Canned whole fat coconut milk shake well before opening
2 tablespoons Sesame Tahini
2 teaspoons Light Soy Sauce
1⁄2 teaspoon Garlic powder
1-3 teaspoons hot sauce add to your taste
1⁄2 ea Fresh Lime
1⁄2 ea Avocado sliced

Directions

  • Preparing the Kelp Noodles:
  • Place kelp noodles in a colander and rinse well while loosening the noodles from one another. Let the noodles drain while you prepare the sauce.
  • Preparing the Sauce:
  • Add the coconut milk, soy sauce, tahini, garlic powder and hot sauce to a medium sized bowl. Whisk ingredients until well blended.
  • Put it All Together:
  • In a large mixing bowl add the carrots, cucumbers, seeds, almond, noodles and sauce. Squeeze in the juice from a wedge or two of fresh lime. Toss with tongs until well mixed. Allow to marinate in the fridge for at least 30 minutes. Toss with tongs one more time before serving. Garnish with sliced avocado and a lime wedge. Enjoy!
