Fuel up for the day with this superfood breakfast bowl. Make it the night before and you’ll be ready to grab and go the next morning!

Ingredients
1 cup full fat coconut milk
1 banana, mashed
3 tbsp chia seeds
1/2 tsp vanilla
dash of cinnamon

TOPPINGS
3 tbsp raw almonds or other raw nut, chopped and soaked
2 tsp coconut flakes
1 tsp chia seeds
pinch of cinnamon
drizzle of raw honey or maple syrup (optional)

Directions

  1. Mash banana in a bowl, stir in chia seeds, coconut milk, vanilla and cinnamon. Combine evenly.
  2. Cover bowl and place in fridge overnight or at least 4 hours to thicken. The mixture will become like pudding in consistency.
  3. For the toppings, combine drained nuts, coconut flakes, chia seeds and cinnamon in bowl and serve on top of chia pudding.
